Ah Wednesday only seven days to go until next Wednesday.

Welcome back to the mothership.  I hope the week is being good to you, things are pretty good around here.

So first off and most importantly I promised you a recipe and so a recipe you shall have.  This is just a little tasty thing I concocted that I hope you enjoy.

Get a good sauté pan and heat that bad boy up.  I’ve been using coconut oil but you can use any oil you want.  Take one whole, diced onion and throw it in, let them caramelize.  To this add any lean meat you like, I used veal.  I trimmed the fat and cut it into small cubes.  Throw them in the pan.

Take 10-15 washed, and chopped asparagus (I cut mine into 3s) and add them.  To this throw in 3 sliced roma tomatoes.  Cover pan with lid and let simmer.

I didn’t add any salt but you certainly can.  I did add some paprika which I thought added some nice flavor.

You can eat this as is or serve over rice. I ate mine with red rice which I thought really complimented the meat and veg.  The dish is low in fat, high in protein and fiber with a decent amount of carbs without going crazy.
